this gluten free, dairy free and refined sugar free treat is perfect for a summer night!

ever since moving to Asheville, I have been given the wonderful opportunity to be surrounded by the fresh peaches all summer long! During those warm months, the local, farmers market was flooded with buckets and buckets of juicy ripe peaches!
these beautiful stone fruits have quickly become my favorite, and I have often been seen buying half a bushel at a time! There are a wide variety of peaches to choose from, and they are all great as snacks or as additions to meals. I have noticed that around the end of the week I am left with some peaches that are not as firm as they were in the beginning of the week, but still just as delicious. These are the peaches that I use for peach cobbler.
for this cobbler you can use any variety of peaches, but I am using yellow freestone peaches. While you can use firm, fresh peaches, I recommend using ones that are on a bit of a softer side. These will cook down excellently and allow you to make use of the peaches that are just a tad soft and not as good for snacking.
when cutting the peaches, do you want to make sure that you get them small enough slices that they’re easily manageable. I tend to cut my peaches in slices. Be careful not to get any of the pit fragments inside of your bowl of cut peaches.
once all the pages are cut, it’s time to put them onto the stove, and that is when all of the wonderful other ingredients are added.
I like to use honey, but if you were going for a strictly vegan recipe, you can use something like maple syrup, or agave syrup, and still have the same effect. Lemon juice also plays a key role in this dish as it brings acidity to the sweetness cinnamon and vanilla extract are also included.
I like to get started on the Crumble mixture while that is cooking. Thankfully the mixture uses similar ingredients to the filling. I chose almond flour, but if you have an allergy to almond flour, I would suggest to use a flour such as coconut flour in order to make a small to medium size cobbler. I usually use 2 cups of this and instead of butter, I use olive oil. I add that in gradually, until it gets to be a crumbly mixture that is still Joey enough to be molded by your hands. I also add about 2 tablespoons of honey, some cinnamon and some vanilla extract.
this treat bakes until golden brown, and will be the star of your next cookout or dinner! Friends and family will be lining up to get another slice of this delicious dessert!
Gluten-Free, Dairy-Free, and Refined Sugar-Free Peach Cobbler Recipe

This gluten-free, dairy-free, and refined sugar-free treat is as easy to make as it is delicious! Your guests will love this dish as much as you do!
Ingredients:
- 8-10 ripe peaches
- 1/4 cup honey (or maple syrup/agave syrup for a vegan option)
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
For the Crumble Mixture:
- 2 cups almond flour (or coconut flour for an almond-free option)
- 4 tablespoons olive oil (or more for texture)
- 2 tablespoons honey
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a baking dish with dairy-free butter or coconut oil.
- Wash and slice the peaches into small manageable slices. Remove any pit fragments and place the sliced peaches in a large bowl.
- In a pot, combine the sliced peaches, honey (or your preferred sweetener), lemon juice, cinnamon, and vanilla extract. Cook over medium heat until the peaches soften and release their juices, about 15-20 minutes. Stir occasionally.
- While the peach filling is cooking, prepare the crumble mixture. In a mixing bowl, combine the almond flour (or coconut flour), olive oil, honey, cinnamon, and vanilla extract. Mix until it forms a crumbly mixture that is still slightly moist and pliable.
- Transfer the cooked peach filling into the greased baking dish. Evenly sprinkle the crumble mixture on top of the peaches.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the crumble topping is golden brown and crispy.
- Once baked, remove the peach cobbler from the oven and allow it to cool for a few minutes before serving. Serve warm with a scoop of dairy-free ice cream or whipped coconut cream, if desired.
